Laura's Brazil Nut Sensation

This favourite Christmas recipe is one that has been passed down in my husband's family for many years.  His mother made it for him and now I make the same recipe for my family.  It's so special that I've even wrapped it up and put it under the tree!  It's simple to make and freezes well! 


3/4 cup sifted all purpose flour
3/4 cup granulated white sugar
1/2 tsp baking powder
1/2 tsp salt
3 cup Brazil nuts (shelled)
1.5 C well drained maraschino cherries (red and green for a festive color)
3 eggs
* 1/2 cup chopped dates (our family doesn't prefer dates, but the original recipe included them)  If adding dates, only use 1 cup of maraschino cherries.
1 tsp vanilla extract


1.  Preheat oven to 300 degrees.  Grease and line loaf pan with wax paper or use festive liner.
2.  Sift flour, sugar, baking powder and salt over combined nuts and cherries.  Mix until well coated.
3.  In small bowl, beat eggs till foamy, add vanilla, then stir into nut mixture.
4.  Fill loaf pans 3/4 full.  Bake loaf 1.5 hours or till done.  A toothpick should come out clean from the middle of the loaf.  Place a piece of parchment on top to keep tops of loaves from getting too brown while baking.  Makes one "sensational" loaf!
